In the 1790’s at the beginning of the slate quarry industry in North Wales, Welsh Rarebit became an economical staple dish favored by many of the working families during hard times. This past October while hiking in the “Snowdonia National Park” in North Wales we tasted some Rarebit along the way. A restaurant in Porthmadog hands down won the award for the best “Welsh Rarebit”. To make Welsh Rarebit, toast some hardy, grainy bread on both sides. Mix a little butter, flour, salt, pepper, dry mustard, Worcestershire sauce, tabasco sauce, milk, 1/2 cup beer and some mature cheddar cheese and melt on top of the toast and Bob’s your uncle! On Saturday we invited our next door neighbor over to taste, and the verdict was, delicious!
